For a fourth time, the Zacharie Cloutierfrom the Nouvelle-France cheese factory, wins the Caseus Or, crowned “best cheese in Quebec”.
What’s special regarding this cheese?
According to Marie-Chantale Houde, co-owner of Fromagerie Nouvelle-France located in Saint-Augustin-De-Desmaures, what makes Zacharie Cloutier special is that “it’s made from sheep’s milk, so it’s not is not made from cow’s or goat’s milk, and it is unusual in Quebec.
“We buy milk from six other companies mainly from the Estrie region to make this cheese.”
“It’s a firm, half-cooked dough, it’s already a challenge to make that and it’s technologically a little more difficult. In terms of aromas, it’s very brioche, caramel, butter, macadamia nuts and the more it ages, the more it will develop aromas of coconut, sweet, maple,” she explains.
“We never managed to meet demand, because the first time we won the Caseus Or, it was in 2011 and we had just created the Zacharie Cloutier,” she recalls.
