There is an ever-increasing workforce alarm for the 54 thousand pastry shops and confectionery companies, of which 39 thousand are artisans, currently engaged in the production of eggs, doves and Easter specialities. According to a survey by Confartigianato, in the confectionery sector the demand for personnel is increasing but the difficulties in finding them are also growing. Last year, out of 24,510 people to be hired for the activities of pastry chefs, bakers and artisan pasta makers (an increase of 7.5% compared to the previous year), 13,970 were difficult to find, equal to 57% of the total workers necessary for companies. The share of unavailable labor in the pastry and bakery sector increased by 13.9% in one year.

At a regional level, the greatest problems in recruiting manpower for specialized tasks in pastry, bakery and artisanal fresh pasta production are found in Lombardy where 66.2% of the 4,110 expected hires cannot be found. Followed by Sicily, with 1,870 potential hires of which 62% are difficult to find, the Marche where pastry shops cannot find 62% of the 1,000 workers needed, Veneto where 61.8% of the 1,440 workers required are missing. And once more, the Tuscany (61.1% of the 1,130 workers requested by companies cannot be found) and Emilia Romagna with 2,690 potential hires of which 61% are difficult to fill.
Increase in consumption and demand for personnel
The increase in demand for personnel by confectionery companies, reports Confartigianato, is linked to the increase in consumption. Easter, in particular, marks the triumph of artisan specialties typical of Italian regional traditions. On the tables of the Easter celebration there are not only eggs and doves: there are at least 150 delicacies that arise from ancient recipes from the territories of our country, revived during Holy Week by food artisans, which continue to be preferred by consumers for their authenticity, the freshness, the typicality that cannot be found in mass-produced products.
