What’s in the bag of potatoes isn’t really pure air, it’s more like nitrogen, a colorless, odorless gas used to preserve some produce.

When French fries are packaged, there is a process called ‘loose fill’ that allows for preservation.

Inside the bag is modified atmosphere packaging, or protective atmosphere packaging, and North Dakota Water explained that nitrogen gas is repeatedly injected and extracted from food packages to remove oxygen.

The process is done with different gases in other products, such as bags of nuts, meat and others. And depending on the oil they use, there is a mixture of nitrogen with some noble gas.

Mario Sanchéz, who is a food specialist, explained in El Español that a high concentration of nitrogen is used in the packaging of potato chips, not oxygen, since if it were present, the fats would become rancid and worsen their characteristics.

Why can’t the bags be full?

North Dakota Water explains in an article that to preserve potatoes, enough gas must be provided within the container so that the contents are protected, without overfilling it, leaving room for additional expansion from pressure changes.
