Why are there white stripes on chicken breast?
When preparing poultry, you are sometimes surprised to observe a multitude of unsightly white stripes covering the flesh of your fillet. Some people are so disturbed by them that they even prefer to remove them one by one using a knife. Do you wonder regarding their presence and wonder if they are dangerous to your health? A priori, there is no great risk in eating this chicken. Now, one thing is certain, tell yourself that its quality is not excellent! These very visible scratches on the flesh of the chicken clearly indicate that it would have undergone rapid growth, or even malnutrition, which is not a good thing. Basically, these white lines are a sign of lower quality: this meat is much fattier, less protein, tougher and probably contains hormones. This immediately gives less desire!
But how can we explain it? It turns out that certain poor agricultural practices can lead poultry to develop “myopathy”, a degenerative disorder of the muscle fibres. Hence the presence of these visible white stripes on your slice of chicken. So obviously if you were looking to lose weight or start a low fat diet, this is not the best option. So that you don’t have any more unpleasant surprises, the next time you go shopping, watch out for this particular sign on chicken breasts. Don’t buy it on the pretext that it’s cheaper than organic chicken, which is much healthier. Indeed, its breeding conditions are much better adapted and its flesh is rarely invaded by such greasy scratches. Your net will only be better and your silhouette will thank you!

- In texture : usually, when you handle the chicken, you can see that its flesh is smooth, elastic, shiny, with a slight transparent fluid. This is all perfectly normal. On the other hand, if by touching it, you feel that it literally sticks to your fingers, that its flesh is sticky and viscous, then it is good to throw away. ” It shouldn’t slip out of your fingers if you’re holding it. That being said, if you’re having trouble holding your chicken because it’s slimy, then it’s probably gone bad.“, explains Natalia Thompson, CEO and recipe creator at Flavorful Home. Also, if you feel it hard, too dry and rough, don’t eat it!
- His smell : here is a size indicator! Normally, a healthy chicken has a neutral and not unpleasant smell. Conversely, if it is rotten, its aroma is immediately significant: a sour smell, rancid or reminiscent of ammonia which has something to put you off. If it smells bad, no need to wash it, throw it away without thinking!
- His color : finally, the discoloration of the chicken is a very revealing sign to know if it is unfit for consumption. In normal times, its flesh is generally pink or white, we are in agreement. Sometimes, it can even appear slightly yellow, it’s not very bad. On the other hand, if your netting has completely turned gray, green, or a very dark hue, that’s a wake-up call. Your chicken has turned!
Good to know : to keep chicken meat in good condition for as long as possible, there are certain golden rules to follow. Already, just following purchase, beware of temperature shocks. You can’t take your trays out of the cool section and keep them in the car, exposed to the sun, for hours. Might as well throw them away when you get home! Chicken is also likely to go bad quickly if left on the kitchen counter for too long. Any fresh meat should quickly be stored in the fridge or freezer.
