“Tôm Sốt Me” (shrimp in sweet and sour tamarind sauce) or “Bò nướng bánh hỏi” (grilled beef with rice noodles, peanuts and fish sauce) has probably been prepared thousands of times: Thi Ba Nguyen is a sprightly 82 years old and is still behind it Herd – she is the head chef at Vina, the first Vietnamese restaurant in Graz, which was even awarded a Falstaff fork.
They have now moved from Grieskai 38 (this location has been abandoned) to a new location at Kalchberggasse 7 – because the old Vina with less than 30 seats quickly became too small. .
Mama Thi Ba Nguyen is most looking forward to the start: “The guests are all like my children. It’s important to me that they enjoy it, that they’re full and satisfied!” Her son Robert is the operator and host. “As the oldest of ten siblings, my mom always cooked for everyone. She loves it and enjoys every day in the kitchen,” he says. He himself was born in Graz; his mother came to Austria from Vietnam as a refugee in 1981. “At home we always cooked Vietnamese food, for us it is a piece of culinary home. It fills us with joy that we can pass on this enjoyment to so many people in our new restaurant.”
They are also very pleased with the new restaurant, which is decorated in olive green and has a decorative bar and lounge area as well as a plant wall. It was designed by the well-known Graz architecture studio Innocad.
The cooking uses mostly regional and organic products, and the wine list includes wines from Karl Schnabel (Gault & Millau Exceptional Winemaker 2020) to the Styrian Sauvignon Blanc world champion Weingut Kodolitsch. The bar serves Vietnamese-inspired cocktails and a DJ plays once a month.
The new VINA restaurant at Kalchberggasse 7 will be open from October 21st daily from Tuesday to Saturday from 11:30 a.m. to 3 p.m. and from 5 p.m. to 10 p.m. or in the bar until midnight.
