Pumpkin seed generally comes from the Lady Godiva oil squash which belongs to the Cucurbita pepo species. It comes from the Cucurbitaceae family in the same way as zucchini and pumpkin. It appears best known for its seeds, devoid of skin. These can be consumed in different forms: plain, grilled, chopped or ground.
In what dishes?
You can add two to three tablespoons of it to your salads (green or mixed), soups, dairy products, mueslis and other porridges. And even to your bread dough if you make it yourself. Prefer them plain, that is to say unsalted. Please note that there is also an edible oil made from these pumpkin seeds.
Magnesium, zinc…
Pumpkin seeds are also a concentrate of nutritional virtues. They are renowned for their richness in proteins, fibers, minerals, antioxidants and polyunsaturated fatty acids. They are thus characterized by their abundance in omega 6 fatty acids, potassium and magnesium, the benefits of which for the heart and blood vessels are known.
They are also full of zinc: a serving of seeds contains almost half of the recommended daily intake. However, “zinc is an antioxidant and an anti-inflammatory agent that also facilitates the metabolic process,” says the American Heart Association.
Which adds that they are also “a natural source of tryptophan, which can help promote sleep”. So many good reasons to sprinkle your dishes with these little seeds.
