Understanding the Impact of Excessive Tips on the Quebec Restaurant Industry

This is why Quebec restaurateurs are launching an internal investigation concerning the alleged excessive tips requested by payment terminals, a phenomenon which could be harmful to the restaurant industry, mentions the Association Restauration Québec (ARQ).

Payment terminals in restaurants and take-out counters suggest adding 20% to 30% tip after taxes. However, the recommended tip is 15% before taxes.

The ARQ will then ask its service provider for digital payment solutions.

“If we see that perception is reality, we will remind our members that we must be sensitive to the customer’s perception and their ability to pay,” explained the director of public and government affairs of the ARQ, Dominique Tremblay.

The Alentours restaurant, in Quebec, has also had enough and decided to exclude tips from its establishment and to instead go for a 10% increase in items on the menu in order to “secure the income of its employees”.

“We bring the terminal with the paid amount. There are no calculations or thoughts. The transaction is not higher,” said the restaurant’s chef and owner, Tim Moroney.

The restaurateur has no intention of going back. “It didn’t lower our bookings and it didn’t shock our guests,” added Mr. Moroney.

For its part, the ARQ does not want to put an end to tipping, even though customers do not always react well.

Actually Tip 15%: What Should I Do?

While there is no solution to preprogram the tip before taxes on payment terminals, Ms. Tremblay suggests entering 13% on the machine, which would be equivalent to a 15% tip before taxes.
