Ingredients:
– 1/2 pork shoulder
– 2 apples
– 2 onions
– cloves
– olive oil
– sal
– pepper
– 100 cc of meat broth
– 2 branches of rosemary
Procedure
Chop the rosemary, add olive oil and set aside. In a very hot frying pan, sear the carré until it is golden brown and transfer it to a baking dish. Place a little rosemary oil on top. Prick the apples and onions with cloves and add them to the dish with the carré.
Cook in the oven at 180° C for half an hour to 40 minutes. Every 20 minutes, paint the carré once more with the rosemary oil. Remove and reserve. Discard the fat from the pan and lift the bottom of the cooking with the thistle. Serve the sauced carré on a platter, accompanied by the apples and onions.
