Tristan Brandt was Germany’s youngest two-star chef. He is the patron and namesake of the “epoca by Tristan Brandt” restaurant in Flims, Switzerland, the “Riva by Tristan Brandt” in Pforzheim and the “Tambourine Room by Tristan Brandt” in Miami Beach, Florida.

In his column, he talks regarding the development of new dishes and reveals recipes.

Our red favorites also contain important nutrients such as vitamin C, potassium and folic acid. In addition, the cell-protecting lycopene, which is mainly found in the red tomato skin. The redder the tomato, the more lycopene. Lycopene has antioxidant properties, which, among other things, slows down the body’s aging processes. good to know, right? In addition, the small miracle weapons also have a positive effect on our health: They strengthen our heart, have a positive effect on cholesterol levels and help prevent cancer.

Tomatoes can therefore be eaten with a clear conscience at any time. But what should you look out for when buying tomatoes and storing them? It’s not always easy to get really tasty tomatoes. Above all, you should avoid tomatoes that are still green and unripe. They contain “solanine”, a substance that can be toxic if taken in excess. But: There are tomato varieties that have green stripes when ripe. This is due to the variety and is absolutely harmless.

Many tomatoes from the supermarket taste rather weak. This is mainly because they are harvested green for transport and then unnaturally ripened using ethylene gas instead of natural sunlight before being sold. I encourage you to embark on a flavorful tomato journey. Find a good fruit and vegetable shop that sells different types of tomatoes and simply bring the colorful variety home with you. You should always make sure that the green stalk is still there. Without it, the tomato will go bad faster.

Do not put the tomatoes in the fridge, because the vegetables do not like that at all. Store these in a bowl out of direct sunlight, separate from other foods. And please consume within four, max. five days. The rule of thumb: the fresher, the better.

Tomatoes offer a variety of uses! You can conjure up a wonderful snack in a very simple way. In addition to the usual, very simple dishes such as tomato mozzarella or a sandwich with tomato slices and chives, I have two other great tips for you.

Tomato tip 1: Buy different varieties. Cut them into slices and arrange them on the plate. Then add a little balsamic vinegar and a few Parmesan shavings. Yummy!

Tomato tip 2: Caramelized cherry tomatoes from the grill, a taste bomb! The tomatoes get a super crunchy crust and are a wonderful appetizer. Heat 3 tablespoons powdered sugar in a cast-iron skillet on the grill over medium-high heat until melted. Then briefly remove the pan from the grill, add the cherry tomatoes and swirl the pan well so that the tomatoes get the powdered sugar well. Then add balsamic vinegar and toss well once more. Once the tomatoes have cooled, they get a hard, crunchy crust. If you then bite on it, the sugar unfolds a sweetness in the mouth in combination with the mild acidity of the balsamic vinegar. Simply delicious!

By the way: the color red fills you up and reduces hunger. Researchers at the University of Oxford found this out when they had test subjects eat from both red and different-colored plates. Much less was eaten from the red plates. Well then, eat yourself lean and fit.

Sincerely, Tristan Brandt!
