Three tips to save on butter

Although it’s very difficult to replace butter in a restaurant kitchen, a chef offers tips to reduce its use and save money.

“Butter cannot be replaced, but there are ways to reduce its use,” explains chef and host, Danny St-Pierre.

For this chef, replacing the butter is difficult since it is used in small quantities.

However, he recommends that people who like margarine so much continue to use this substitute product.

“There are people who will prefer margarine and it’s a matter of taste. Olive oil is also made very expensive”, underlines the chef.

When butter is used for cooking food, equivalent products can be used.

“If you want to cook a steak, we will add a little oil over high heat. We will be able to color our steak and only at the very end we add a knob of butter to keep the taste,” he says.

You can save on the price of meat by running the specials and freezing a large amount. Afterwards, you can still use the butter to make your meal a success.

“The key to being able to appreciate luxury foods is to be able to cook them well and not waste food,” says the chef.
