With the Threads app open, tap the icon located in the lower right corner, then the two little lines (in the upper right corner) and “Privacy”. Now, enable “Private Profile” and tap “OK” to confirm.
Optionally, you can also reach that same section by tapping your profile icon and the globe (in the upper left corner).
Note that with this you will have to manually approve who can and cannot follow you. Additionally, Threads states that if the account is for a minor under 16, it will be set to private by default.
