And it may be that the expenses of a catering establishment are increased, due to the cost of electricity, salaries of employees, VAT and other expenses that businesses have, but in no case is this “slash” of prices justified.

Outrageous

For example, a village salad costs professionals around 3.3 euros and reaches the tables of customers from 10 to 15 euros, especially in the center of Athens or on the islands. This means that it is sold at a “cap” of 354%!

Tomatoes cost 1.7 euros per kilo, while half a kilo of tomatoes (3 pieces) is required to make the salad, i.e. 0.85 euros. Accordingly, a cucumber costs 0.90 euros per piece, onions 0.72 euros per kilo and peppers 2.35 euros per kilo. However, he will put half a cucumber, so the cost drops to 0.45 euros, while the ratio of onions and peppers for a salad is 50 grams each, so the cost is 0.036 euros and 0.18 euros respectively. Given that the price of feta cheese reaches 12.5 euros per kilo, for the 70 grams that correspond to village bread, the cost for restaurateurs is 0.88 euros per kilo, while for olives, which are sold for 11 euros, the cost of 30 per gram does not exceed 0.33 euros. As far as olive oil is concerned, taking into account that the cook will put 50 grams and the price of the liter amounts to 12 euros, the correspondence is 0.60 euros.

Even bigger is the “gap” between the cost of making and selling a portion of pork steak, reaching up to 360%! Pork chops – Greek – are sold from 7.5 to 8 euros per kilo and potatoes at 0.80-0.83 euros per kilo. Thus, the cost for a portion of pork steak with potatoes is 1.9-2 euros for meat (250 grams) and 0.17 euros for potatoes (150 grams), the total cost comes to 2.17 euros . However, in restaurants the dish costs from 8.5 to 10 euros, with the profit for restaurateurs being huge.

Accordingly, a portion of a 200 gram beef burger with fries, for which customers will have to pay between 8 and 10 euros, the real cost for restaurateurs does not exceed 3 euros. This is because the price of ground beef ranges from 12 euros per kilo and for a 200 gram burger they will only need to spend 2.5 euros. It will cost an additional 0.17 euros for the fries (170 grams) and almost another 0.40 cents for the onion, garlic and bread corresponding to the ground meat to make the burger. Thus, the cap on the price of the portion reaches 233%.

Up to 9 times more than the actual production cost, pasta is available in restaurants. For example, a portion of spaghetti with tomato sauce (Napolitana) is served in a price range from 7 to 9 euros, while its preparation does not require more than 1 euro. A package of spaghetti is sold in supermarkets for 1.07-1.18 euros (500 grams), while one portion corresponds to 120 grams, which cost-wise translates from 0.26 to 0.29 euros. At the same time, the sauce requires two tomatoes (half a kilo), that is 0.85 euros, an onion, which costs about 0.10 euros, a few grams of fresh basil, the cost of which does not exceed 0.50 euros, and 3- 4 spoons of olive oil, i.e. about 0.60 euros. In other words, the sauce for 3 portions costs restaurateurs 2.05 euros, i.e. 0.68 euros per portion.

Appetizer

However, catering businesses also make a big profit from appetizers, as a 250 gram portion of french fries costs even 5 euros, when a kilo retails for just 0.83 euros. That is, the cost for the dish is only 0.20 euros plus the cost for the oils they use, which does not exceed 0.50 euros.

What all consumers are wondering, of course, is whether a brake can be put on the phenomenon of profiteering in catering establishments, with controls by the competent services of the Ministry of Development. However, market executives point out that it is difficult to control prices, as the market is free and there is no electronic platform for declaring prices, as for example in supermarkets.
