During this time of the year the slaughters proliferate. For this reason, specialists recommend carrying out the corresponding analyzes to avoid consuming meat that may be affected by the larva that causes triquinosis.
In this sense, from the General Directorate of Bromatology, the veterinary doctor Noelia Coria indicated that there is an agreement between the Municipality and the National University of Río Cuarto (UNRC) so that, at no cost, people can bring their samples to be studied in the laboratory that works on campus, with the aim that the animal disease does not pass to humans.
“For cultural reasons, it is normal for butchers to be carried out at the family or friends level. Many times they are confident regarding the breeding of the animals and, sometimes, they do not carry out the artificial digestion analysis. It is there when cases and outbreaks of trichinosis appear, since it is a disease that is transmitted from animals to people, very common in our region. In fact, every year we have outbreaks and there are even cases in which it infiltrates the commercial route. For this reason, the analysis assures us of the absence of the larva that causes the disease”, explained Coria.
How to study in Río Cuarto
Regarding the studies at the UNRC, the specialist said that there is no cost for individuals and pointed out that the results are in the course of the day. “The sample to be analyzed must be properly preserved. It must be taken from the diaphragm or from the masseter muscles and must be kept refrigerated,” Coria specified.
Next, the veterinarian commented that the disease is transmitted when a human consumes raw or undercooked pork meat or wild species such as wild boars or pumas that have the presence of the larva that causes trichinosis.
“When consuming the meat, the larva crosses the walls of our intestine and lodges in different muscles and encysts. Therefore, it is difficult to come up with medical treatment if it is not noticed in time, which can cause lifelong muscle problems. It is important to be attentive to symptoms such as high fever, muscle aches and swelling of the face, to go immediately to the doctor, in case of having consumed meat with the aforementioned characteristics”, Coria concluded.
