These two Aveyron bakeries will try to become the best in France on M6

Ten establishments in Occitania have been selected to participate in the new season of the M6 ​​program “The best bakery in France”. They are two in Aveyron to compete.

A little over a year ago, Enfariné du Roc was taken over by a bread lover in Nant. A great challenge launched by Franck Hiss, with twenty years of experience in international pastry with Maison Ladurée (Argentina, Qatar, Saudi Arabia…). “We took over the breads from my predecessor, but a lot of them were added,” notes Franck, pointing to a board hung in his bakery which displays the weekly menu of the different breads offered each day. “And in summer, we have even more!”

For good reason, in the summer season, “we are surrounded by six campsites, trail paths, the GR71, the Templar sites, we also have a lot of bikers… We must have between 150 and 170 customers a day. winter, but in summer we go up to 650-700”. And the delicacies that overflow from the windows are all homemade, “we don’t have any cardboard here”. This goes for breads of many kinds, pastries, chocolates, panettones or even Alsatian specialties such as stollen or kouglof, to recall the origins of Franck Hiss. Aveyron specialties are also on the menu, and everything is completed by a vegetable garden in the gardens of Nant which brings a little freshness to the summer sandwiches.

These creations require exceptional organization behind the counter and in the kitchen, L’Enfariné du Roc uses nearly three tonnes of flour every week in high season. “Right now, bakers get up at 4 a.m., it’s a lie-in for them! But in summer, you have to be there at midnight to start baking,” says Christine Hiss, who followed her husband in the project. A “fad” that does not budge from Franck, who would have liked a day to last more than 24 hours: “in the morning, I already think about what I am going to cook in the evening at home. I always love it”.

Franck and his cooking partner Vivien decided to send their file to the M6 ​​program and seduced the jury with a special creation: a bread with spinach and recooked sheep nicknamed Popeye. They were visited by the film crews in June 2022 with the pastry chef of Villefranche-de-Rouergue, Noëmie Honiat, and the baker Meilleur Ouvrier de France, Bruno Cormerais.

The passage of the Enfariné du Roc is scheduled for Wednesday January 4 on M6, from 6:35 p.m.

A child of Luc-la-Primaube

In Luc-la-Primaube, the story of the Clem l’Artisan bakery is that of a childhood dream. Clément Béteille is a child of the village and took over the establishment in May 2019, “a semi-creation” which required long work “to create the lab and redevelop the store to our liking”.

Since then, homemade products reign in the windows of the bakery, whether it is the many different breads with their Aveyronnaise flour or the pastry creations. “We can make between 400 and 500 pieces a day”. Clément Béteille can count on his apprentice Axel, 16, to help him in the kitchen from 4 a.m. Whether master or student, both have acquired a taste for the profession during a third-year internship in this bakery in Luc-la-Primaube and now compete in pairs on the M6 ​​program.

“It was the show that called us to find out if we wanted to participate in a pre-selection”, explains Clément Béteille, all smiles. “We were super happy. It was a dream, almost!”. Beyond making himself a little better known through the show, Clément Béteille is delighted with the highlighting of Luc-la-Primaube for one evening on M6. “I’m really attached to Rodez, and especially to Luc-la-Primaube. We mainly talk about big cities in the media, everywhere in France, but we don’t talk enough about small villages!”

Since filming with M6 in June, “not a day goes by without people asking us if we won or not! But we’re not going to say anything, we’re going to let people find out. As for a match football, there is no more suspense if we already know the result”.

Clément Béteille and Axel gave everything to present original creations and seduce the jury. Without saying too much, expect very gourmet Aveyron specialties… Pastry chef Noëmie Honiat and Meilleur Ouvrier de France baker, Bruno Cormerais, will judge on M6.
