“When it started I realized that I had to close most of my restaurants. It was a difficult moment and one of great reflection, but it helped me to reinvent myself, to renew myself. Two or three years into the confinement I said that I was not going to lie down complaining. And I discovered that there were many things that I might do and I managed to organize myself. It was a moment to discover myself and discover that health, taking care of myself, exercising and eating well, was something that I needed”.
