YOUR FIRST RESTAURANT
Cooking is a fundamental part of his life, which is why the opening of his Criterión restaurant is a vivid reminder of it. “For a long time that was my dream and that of my brothers. I worked very hard outside and at that moment when we opened the door of the restaurant it was seen as consecrated, as expressed all the work we had done. TELEVISION DEBUT OF JORGE RAUSCH
The first TV show is another special moment in the cook’s life. It was on the channel El gourmet, it was called brothers in the kitchen and introduced him to Mark. “I was a very nervous guy, very shy, and the moment I finished the first program, my first cook, it was a very special feeling. I remember that I have never felt so tired in my life. But it was wonderful to get over my fear of cameras, to let go of all that shyness I had. It was very cool”
THE PANDEMIC
“When it started I realized that I had to close most of my restaurants. It was a difficult moment and one of great reflection, but it helped me to reinvent myself, to renew myself. Two or three years into the confinement I said that I was not going to lie down complaining. And I discovered that there were many things that I might do and I managed to organize myself. It was a moment to discover myself and discover that health, taking care of myself, exercising and eating well, was something that I needed”.

A SPECIAL KITCHEN
Being part of Le manoir aux quat’saisons in England was a dream come true. “When I left cooking school I managed to get the job in the restaurant that I dreamed of. I remember the first time I entered that kitchen… the smells, the dishes, the rush-run, the aura that this place had, it was something that seemed magical, fantastic and that is what has inspired the rest of my career to do what I am, to cook as I cook, to have the demand and excellence that I always try to have in my things”.
