With the intense heat of the past few days, it’s the season where cold things feel delicious. Ice cream, soft serve ice cream, shaved ice, etc. are likely to reach out.
Ice cream and soft serve ice cream look a little different, but the hotter they are, the more they sell. Also, does the taste change depending on the temperature?
The difference from ice cream is the product temperature
Ice cream and soft serve ice cream are both frozen desserts made mainly from milk, but there is a big difference in the product temperature. Ice cream is sold at -18°C or below, while soft serve is -7 to -5°C. This is also why the texture of soft serve ice cream feels softer than ice cream. Then, why is there such a difference in product temperature? We interviewed Nissei Co., Ltd., a general manufacturer of soft serve ice cream.
“Ice cream made in factories is brought to stores at a temperature that does not melt, and is sold at a temperature that does not melt. Customers can enjoy freshly made ice cream on the spot.Soft serve is like ‘freshly made ice cream'” (Nissei Co., Ltd.)
For the convenience of sales, ice cream must be put in a container as it is creamy, quickly frozen at the factory, and then stored at a temperature that does not melt. But soft serve doesn’t need that.
It doesn’t mean “it sells because it’s hot”
The difference between the two is also reflected in the relationship between temperature and sales. It seems that soft-serve ice cream cannot simply be said to sell well because of the heat wave.
“The sales of soft serve ice cream are greatly influenced by the number of customers at the resort” (Nissei Co., Ltd.)
Of course, the temperature can affect the number of visitors to the resort. However, that doesn’t mean that “high temperature” is directly linked to “sales” like ice cream. This is because if the heat wave continues, more people will refrain from going out, and there may be cases where the number of visitors from resorts is reduced.
“With the restrictions on going out due to the new coronavirus infection that started in 2020, soft serve ice cream was in a difficult situation. Customers did not come to the store, so despite the hot summer, ice cream did not sell. can be sold by mail order, but there is no mail order for soft serve ice cream. This is a simple example that does not correlate with temperature.”
In addition, it seems that changes in temperature can bring regarding changes in consumer needs such as taste.
“As the maximum temperature rises, people tend to prefer refreshing tastes such as ramune flavor.” (Nissei Co., Ltd.)
It’s true that under the scorching sun, people tend to choose light flavors over rich ones.
Well, today, July 3rd, is “Soft serve ice cream day”. On this day in 1951, corn-style soft-serve ice cream was sold for the first time in Japan at a refreshment stand for the carnival sponsored by the Occupation Army held at Meiji Jingu Shrine. Since then, soft serve ice cream has undergone various evolutions in terms of taste and type, and has reached the present.
Soft serve ice cream that gives us “deliciousness” and “happiness” at the same time. How many times will we eat this summer?
