Rather burger, pizza or sandwich? One thing is certain: the French love it. Fast food and snacking continue to gain ground in France. Inflation has not changed anything, on the contrary. Market turnover increased by more than 11% between 2022 and 2023, according to the Speak Snacking study carried out by the Sandwich & Snack Show–Parizza trade shows with the research firm Strateg’eat.
In the hearts of the French, the sandwich retains a special place. It remains in the top 4 of their favorite salty “snacks”. A must-have that is reinventing itself, as Europe 1 has seen at the trade shows currently dedicated to snacking in Paris: the Sandwich & Snack Show–Parizza trade shows.
Exotic recipes
On the table, a baguette cut in two. So far nothing very surprising. But inside, the classic buttered ham gives way to more Mediterranean notes, imagined by chef Guy Martin. “In this chicken sandwich, there is ras el hanout, it’s a mixture of spices that comes from the Maghreb, with candied lemons, dried fruits also including apricots. It’s to take our client. It’s as if he was going to Morocco, to Tunisia.”
At the helm of the Grand Véfour restaurant in Paris, Guy Martin is participating in the launch of a new snacking offering for bakery professionals. With original ingredients, premium sandwiches like the one presented today obviously have a price. But for the chef, offering new flavors is essential to face competition from other snacks, such as burgers or pizzas.
“The sandwich is part of a range of snacks which is in a big international movement. Some of it comes from the United States, Japan, Korea, India too. So today we have to be able to offer diversity recipes. We don’t want to eat the same sandwich every day.”
Meatless sandwiches
Exotic inspirations, hot preparations, but also meatless sandwiches, snacking is reinventing itself and following new consumer trends. Fabien Poulaillon and his “Moricettes”, sandwiches made from brioche bread, offer vegetarian recipes: “In our stores, we have two or three Moricettes which are vegetarian. And we create two to three new ones every year. “It’s not the biggest turnover but it’s constantly increasing.” Whatever the recipe, success is always there: each year, more than two billion sandwiches are sold in France.
