There is heavy news from the Northern Jutland bakery, which for almost 50 years has supplied special bread to the entire country.
“Unfortunately, we have to announce that we have not been able to find a bakery that can take over our bread production following the bakery Først til Mølle has gone bankrupt,” reads a notice on the bakery Aurion’s website.
The bakery had made an agreement with Først til Mølle to take over the actual baking of the bread, but the bankruptcy of Først til Mølle put an end to that cooperation.
Since then, the nationally renowned bakery Aurion, based in Guldager south of Hjørring, has tried to find another bakery that might take over the bread baking. But despite several inquiries, it has not been successful, and Aurion must now stop baking bread completely.
“The overriding challenge is the way we make the bread. Our bread has never been like the others. You have to be able to bake with sourdough, and there are many who can, but baking with baker’s yeast and honey-salt-rising is too many completely unknown baking methods”, writes Aurion.

The bakery is run down
It is also not an option that Aurion will resume baking the bread himself. The bakery is run-down and requires large investments, and at the same time, Aurion also has to admit that bread sales are too low.
Therefore, it is not profitable to renovate the bakery.
– There should be no doubt that it is a very difficult decision for us to shut down bread production. Outsourcing our bread baking was an opportunity to continue our bread baking in a sensible and profitable way. It was a big line in the bill when Først til Mølle went bankrupt. We certainly didn’t expect that”, says Aurion’s director Brian Tholstrup Nybo and continues:
– We know how many people like our bread, and the breads have been part of Aurion for almost 50 years. Therefore, we have also worked intensively to find a solution in the last few months, but unfortunately we have to admit that it is not possible at this time. We are incredibly sorry for that.
Some recipes on the website
Aurion continues to sell flour and the company’s other products to e.g. bread baking, and there will also be access to some of the bread recipes on the company’s website.
But the pumpernickel bread, the four-grain bread and the fruit bread are very difficult breads to bake yourself due to the honey-salt proofing, the baking fermentation method for the fruit bread and, in the case of the pumpernickel bread, the long baking time.
It is the bakery’s signature bread, and here Aurion will not give up the recipes, because perhaps one day it will be possible to resume baking the special breads.
