But according to researchers from INRAE, the Barcelona Global Health Institute, Inserm and Sorbonne-Paris-Nord University, the content of the plate alone is not enough. Eating time is also important.

Before 8 a.m. and not after 8 p.m.

By following more than 100,000 participants in the NutriNet–Santé cohort, scientists observed that those who ate breakfast late had a cardiovascular risk increased by 6% with each passing hour. For example, those who eat breakfast at 9 a.m. had 6% more risk than those who eat at 8 a.m. For those who have a snack at 10 a.m., this risk is increased by 12%…

The same goes for dinner. Those who dine after 9 p.m. see their risk of stroke increase by 28% compared to those who do so before 8 p.m., “particularly in women,” note the authors.

What explanation?

Difficult to say as this is only observational work. However, as Dr Bernard Sour from the Human Food Department at INRAE ​​explains to us, “several hypotheses are available to us: food intake synchronizes the internal clocks, or circadian rhythms, of the different organs of the body, influencing in particular cardiometabolic functions such as blood pressure regulation. »

“Moreover, our insulin sensitivity is more optimal early in the morning, and we are more resistant to insulin in the evening. This makes it more difficult for our body to metabolize food in the evening. Data from randomized controlled trials have also shown more glucose intolerance, insulin resistance and worse lipid profile when melatonin is high, i.e. in the evening or night. Finally, we know the link between skipping breakfast and weight gain. Which is in the same direction as our results,” adds the specialist.
