Sitting on a bench, Pierre Hermé puts his mark on a piece of paper held out by a little boy. This is probably what we call “having a signature”. An expression now widely democratized thanks to television cooking shows. At 61 years old, the Alsatian chef is an authentic star: nicknamed the “Picasso of pastry” by Vogue and crowned best in the world in his discipline by World’s 50 Best Restaurants in 2016. The “macaron king” reigns over nearly 600 employees, working in 60 points of sale, spread across 12 countries. He was thus able to give form to limitless creativity. Even if, for him, form will never surpass taste!
