Created in 1996, the “Confrérie du Gay Boulet” aims to defend the famous Liège boulet and its artisanal quality (gaY simply coming from old French and meaning “gay, welcoming, joyful”.) Since then, the small team has been reunited on the different restaurant tables in the region in order to take turns honoring the various establishments which offer this typically Liège dish. Each year, a trophy called “Boulet de Cristal” is awarded to the restaurateur whose recipe is closest to the local tradition.
The 2023 crystal ball was presented three days ago, during a ceremony at the Christmas Village, at the restaurant the In-between located rue de Herve 461 in Grivegnée.
Reminder for non-Liège residents, the Liège boulet is a preparation of minced meat shaped into large balls, which are browned on the sides then simmered in a sweet and sour sauce with Liège syrup. Everything is generally accompanied by fries.
