The Best Pudding 2023 Results: Who are the Top Butchers in Liège?

The Mangons brotherhood (term which in the Middle Ages designated the corporation of trades related to meat in the Liège region) has delivered the results of its competition for the best pudding 2023.
As for the traditional Liège pudding flavored with marjoram from the slopes of the Citadelle, which aims to obtain the Protected Geographical Indication (PGI) label, seven butchers received a Gold medal. Surprisingly, among these, none is located within the territory of the city of Liège.

The first is Thibault Walrant, with a score of 96%. Its establishment, La Boucherie de l’Air Pur, is located at rue de la Verrerie 154 in Seraing. An area well represented since the second, Philippe Evrard, is located on rue Wagner in Boncelles. The following ones are located in Aywaille, Verviers, Xhoris or Beaufays.

And the winners have been located in the outskirts for several years.

So why this under-representation of Liégeois in the top pudding manufacturers? “There may be a lack of desire to participate. Participation fees have also increased significantly in recent years.“, the winner tells us. But, among other competitors, we emphasize that the real butchers who work on site in their workshop are fewer in number in Cité ardente. To the point of being dethroned today in their emblematic product.
