Such seeds are a source of antioxidants, polysaccharides, fiber, bioflavonoids, microelements. At the same time, the substances are in a more accessible form and therefore are absorbed much better than from a mature plant.

“With regular use, microgreens normalize the functioning of the gastrointestinal tract, start recovery processes in cells, improve detoxification and increase the body’s resistance to infections,” she told the Now Attention website.

However, not all seeds are suitable for germination: all nightshades, including tomatoes and potatoes, should be excluded due to the alkaloids they contain, as well as beans. Do not use processed greens – only fresh washed.

The main danger of microgreens is allergic reactions to specific seeds due to too dense concentration of certain substances, for example, in spinach and parsley.

“In general, microgreens are a real superfood and a healthy addition to any salad,” the expert concluded.
