Agave syrup is extracted from the agave plant, a succulent plant native to Mexico. It is considered a vegan alternative to honey because of its syrupy texture and natural sweetness.
With its neutral taste and its strong sweetening power, it is necessary to use less than classic sugar. In fact, 50 g of agave syrup is equivalent to 150 grams of sugar. If it is so high in calories, you need less to be as sweet.
Another advantage is its low glycemic index (around 15). This allows, as with coconut sugar, not to cause a glycemic peak.
Agave syrup is also interesting because of its nutritional composition, much better than refined white sugar. It contains vitamins but also calcium, magnesium, iron and potassium. Rich in carbohydrates, its consumption must still remain reasonable, as with white sugar.
In terms of use, you can use it to sweeten your drinks and dishes. Agave syrup mixes well in cold drinks, smoothies and cocktails. It is also an excellent choice for sweetening pastry and dessert recipes, replacing honey or maple syrup.
Did you know ? Agave syrup has antibacterial properties! The Aztecs used to treat certain skin diseases or minor infections with it.
