Malakoffs, like duck breast or hot fondue, are staples of Paleo gastronomy. “It’s a historic stand that we call Paleolithic, laughs Lawrence Simmons, manager of the stands of the Nyon event. This is one of the specialties that festival-goers appropriate.”
