Surprise diners with this succulent paella

Ingredients:
– olive oil c/n
– 2 tomatoes
– 2 garlic cloves
– 2 onions
– 1 green pepper
– 1 red pepper
– 3 garlic cloves
– 300 g squid
– 400 g hake
– ½ cup white wine (optional)
– 280 g medium grain rice
– fish or vegetable stock c/n
– 2 tbsp. turmeric (optional)
– 2 tbsp. paprika (optional)
– 200 g mussels (optional)
– 200 g clams (optional)
– 150 g shrimp (optional)
– 150 g scallops (optional)
– 150 g cockles (optional)
– 8 prawns (80 g) (optional)

To decorate
– red bell pepper in strips
– chopped parsley
– lemon wedges

how it’s done

Process the tomato with garlic and olive. Reserve. In a separate pot prepare the broth.

Heat the paella pan, add oil and brown the shellfish with garlic. Once golden, salt, remove and reserve.

In that same paellera, to take advantage of the cooking bottom, make the sauce with the onion and peppers. Add the rice, toast for a few moments. Make a hole in the center, add the turmeric and paprika and toast briefly.

Add the seafood and integrate everything with the rice. Add the tomato sauce, the broth, lower the heat and cook, without stirring. When there are 5 minutes left, place the hake in pieces. When the rice is ready and charring has been achieved, turn off the heat, let it rest for 5 minutes. Garnish with bell pepper strips, chopped parsley, lemon wedges and serve.

* If you want to make a cheaper paella, you can put only squid and hake!
