68% of French people drink coffee regularly. Consumed in the morning for breakfast, lunch or even dinner, it is the second favorite drink of the French.

But a study carried out by researchers at the University of Braunschweig and published in Beverage Plant Research showed that coffee contains two substances toxic to health: acrylamide and furan.
These two substances are recognized as carcinogenic in animals, probably in humans.
Coffee: toxic substances detected during roasting
To reach these conclusions, the researchers analyzed, in different types of coffee, the content of acrylamide and furan derivatives.
In detail, the study reported that:
- acrylamide content is higher in light roasting;
- the content of furan and methylfurans is weaker in case of light roasting;
- so-called “special” roasts, such as double roasting or roasting with a sudden change in temperature, do not seem to have no impact on acrylamide and furan content.
Roasting would therefore be a parameter influencing the content of chemical substances contained in coffee.
Green tea: a good drink to replace coffee
Some may be concerned regarding the little-known effects of acrylamide and furan on the human body.
So, when looking for an alternative, green tea is a good candidate. Indeed, green tea is known for its antioxidant properties and helps prevent cardiovascular diseases. For those who want to pay attention to their figure, green tea can also be a slimming ally.
Unlike coffee, tea does not require a roasting process to be consumed, which reduces the risk of the presence of toxic substances.
