You read correctly, yes, there is a quick and flourless soufflé recipe. Yet this kind of cake seems to require a certain technique.
Prepared from simple and affordable ingredients, the result will be both delicious and creamy.

From the Latin sufflare which means “to inflate, to blow”, this dish has been in vogue since the 19th century with the reputation of not being easy to succeed.
Puffed yogurt cake: the recipe
Equipment :
- Two bowls.
- A manual whisk.
- A robot whip beater.
- A round cake tin with or without bottom, 16-18 cm in diameter.
Ingredients :
- 4 eggs.
- 3 tablespoons powdered sugar or fructose
- 1 teaspoon baking powder
- 3 tablespoons cornstarch
- 350 g of natural white yogurt such as Greek yogurt which corresponds to 2 and a half pots of classic yogurt
The preparation :
- Separate whites from yellows ;
- In the bowl of egg yolks, add the powdered sugar then mix;
- Add baking powder and cornstarch. Mix everything;
- Pour in the plain white yogurt.
Preferably use a manual whisk for a more delicate mixture of all the ingredients.
- In the bowl of egg whites, whip them, preferably with a whisk mixer. Add a pinch of salt before;
- Gently incorporate the 2 preparations, yolk and white, to obtain a slightly foamy batter.
In a cake pan, place slightly moistened baking paper to prevent the soufflé from sticking and pour the preparation into it.
The cooking :
- At 160 degrees, for 30 minutes.
- At 140 degrees, for 10 minutes.
- Then leave to cool for another 10 minutes in the oven, turned off.
Gently remove the parchment paper all around the cake without hesitating to tear it.
You notice that the top has slightly peeled off.
If your soufflé shakes on either side when you touch it, then you’ve made it!
Sprinkle with icing sugar and serve it still warm, it will only be better.

You will need:
- 2 eggs
- 40 g of sucre or fructose
- 50ml water
- and 50 g dark chocolate with high cocoa content in bars
Here is the recipe to follow before enjoying:
- Start by preheating the oven to 180 degrees.
- Separate whites from yellows. So far, these are the same indications as the 1st recipe.
- Whip the egg whites with the sugar.
- Heat the water, add the chopped chocolate and stir until well melted.
- Fold the two egg yolks into the melted chocolate until you get a shiny texture.
- Gently add the whipped egg whites to the batter so as not to lose the air in it.
- Choose small individual glass or earthenware containers that will need to be oiled inside and on the edges to prevent the preparation from sticking, then add the mixture to three quarters in order to leave room for the soufflé to rise .
- Finally, bake in the oven for 5-10 minutes at 180 degrees.
