That’s it, the beautiful days are coming: this week we are entitled to a menu… with local flavor!

After the asparagus last week, it’s the turn of Quebec radishes to show up! A touch of color and freshness that we can happily enjoy until mid-October! If we are used to eating radishes as raw vegetables or incorporating them raw into our recipes, they are no less delicious when cooked. Its taste softens and is even sweeter following cooking! This week’s salmon recipe is therefore a great introduction.

Speaking of radishes, remember to remove the leaves from them when you return from the grocery store to extend their life. For what ? It is through the leaves that they lose the most water and that their aging accelerates. You will therefore easily give yourself several days of grace by cutting their tops. We then favor a packaging or a ventilated container with the addition of a cloth or a paper towel to keep the radish crunchy… and dry!
