Simple Focaccia – the easiest and fluffiest recipe!

Without a doubt this simple focaccia left me in love. That’s because the dough is very easy to make and besides, the result is simply amazing.

Surely you will want to repeat this recipe countless times because of how wonderful it is.

What is focaccia?

Focaccia is a very common type of bread in Italy. Its main characteristic is that it is a low bread and that, most of the time, it is seasoned with herbs and thick salt.

However, it is super common to find versions with tomato, onion and even potato.

A dough that does not need to be kneaded

I can confidently say that anyone can make this recipe. Even those who don’t have much skill in the kitchen or have never prepared bread.

In fact, you will have practically no work at all, much less will you need a mixer to make this delight.

This is because this dough does not need to be kneaded. You will only mix the ingredients well and respect the growing times.

And even more: we’ve already made the more hydrated version (when we add more water to the mixture and the dough becomes softer) and the version with a firmer dough, and it works anyway.

Why does my dough stay in the fridge?

Possibly this is the great secret of this recipe: patience. For you to get a fluffy dough, very tasty and without any yeast taste, you need it to ferment slowly and for that, you will need to put it in the fridge.

And I tell you, does it work if you only leave it for 6 hours? Yes, but certainly 12 hours is a magic number and the result is a fluffy, tasty dough that doesn’t feel heavy following eating.

As I said, it is possible to make focaccia even with just the dough. But without a doubt, it tastes even better when you add more flavors, such as:

  • herbs: fresh rosemary, oregano and basil bring even more flavor;
  • Tomato: whether in the fresh version or the dry version, they will make your focaccia even more delicious;
  • Onion: I already added the raw onion to cook with the pasta, as I also used caramelized onions, and the 2 forms are delicious;
  • cheeses: be it a grated parmesan or pieces of cheese like gorgonzola or provolone, they will bring even more flavor to your bread.
  • Coarse salt: it is probably the ingredient that I find most indispensable, because it makes all the difference in the final result.

And without a doubt, mixing ingredients can be the best solution. Here, for example, we use tomatoes and fresh basil and rock salt. But we love including a good grated Parmesan cheese in our pasta.

Delicious and very easy to make, this focaccia is just perfect. I’m sure you’ll love it.

Ingredients

  • 1 teaspoon of biological yeast;

  • 1 teaspoon of salt;

  • 2 cups of wheat flour;

  • 1 tablespoon of sugar;

  • 1 cup of warm water;

  • olive oil – approximately 1/3 cup;

  • Stuffing to your liking – see notes.

Instructions

  1. Start by mixing the flour, sugar, salt and yeast;
  2. Then add the water little by little, until it forms a very uniform and firm mass;
  3. Cover your dough with plastic wrap, leaving it looser to give room for the dough to rise – see notes;
  4. Take your dough to the fridge for 12 hours;
  5. After that time, transfer your dough to a greased board with plenty of olive oil – we used a 23 cm diameter round;
  6. Then water the dough with olive oil and with your fingertips make small cavities in the dough. Add your stuffing and let this dough rise for another 2 to 3 hours at room temperature;
  7. Finish with coarse salt and bake your focaccia in a preheated oven at medium temperature (approximately 200°) for 35 minutes or until golden;
  8. Let it cool down a bit before serving.

Notes

  1. We use cherry tomatoes, basil and thick salt to finish;
  2. Plastic film is essential so that the dough does not dry out in the fridge, which is why it needs to be in contact with the dough.
