Should we favor goose, duck or vegetarian foie gras?

Foie gras raises a lot of questions in terms of taste and on the subject of animal condition, but also questions for our health, in particular because of its nutritional composition.
Several characteristics of foie gras or rather foie gras will surprise you. We are going to compare duck foie gras, goose foie gras and vegetable foie gras, which we call “faux gras”! There is something for all tastes and sensibilities!

By definition, foie gras is fat. We make an animal’s liver fatty by stuffing it with corn, and therefore carbohydrates! In a 50 g portion of foie gras, we ingest more than 20 g of fat, the equivalent of two tablespoons of oil.

Duck and goose, same fight

We hear that it’s good fat. It’s wrong. In any case when we know that almost half of the fat is saturated fat, the fat which is associated with cardiovascular diseases, we immediately stop justifying consuming foie gras for its good fats. And this goes for both duck foie gras and goose foie gras. What is true, however, is that foie gras is an unrivaled source of vitamin A! It is also very rich in iron.

In terms of protein, duck or goose foie gras provides around 10 g per 100 g. This is much lower than what meat and fish provide!

Goose foie gras is a little less fatty and therefore a little less rich in saturated fats. But honestly, these differences do not justify distinguishing them in terms of their quality for health.

The unpleasant surprise of fake fat

All we have to do is compare these real foie gras to vegetable foie gras! Is this fake fat good for your health? Sorry to disappoint you, but that’s not the case. These “false” foie gras are generally very rich in saturated fats, and this disadvantage is not really offset by the presence of legumes and nuts. Moreover, fake fatty foods are often classified D in the Nutri-Score compared to an E classification for real foie gras.

To summarize, foie gras and fake fats are in no way foods to promote health. These are festive foods, and when you’re partying, it’s frankly not justified to force yourself to eat what is nutritionally better, provided of course you don’t party every day! Take what you like, what you can buy and what corresponds to your sensitivity towards the consumption of animal products!
