It’s one of the French’s favorite foods: salmon. The consumption of this fish has led to overconsumption and the consequences are serious.

It is on all the stalls and is the most consumed fish in France. Paved, filleted, smoked or even sushi, there is something for everyone. The French consume more and more of it, almost 300,000 tonnes each year in France, on average four kilos per inhabitant. “It’s easier to cook, there are no bones, everyone likes it” declares a passerby shopping at the market.

A fish that no longer has anything wild since 99% of the salmon is imported and comes from industrial farming, particularly from Norway or Scotland. In these countries with cold waters, huge factory farms have been set up in the open sea and thousands of salmon are raised in each tank. The promiscuity in these pools takes its toll and the mortality rate can reach up to 20%. “There are no regulations governing all of this so you can put as many salmon as you want” deplores Gwendoline Farias. France is today the leading consumer of salmon in Europe.
