Chances are you’ll eat this Romeo and Juliet cookie until you’re done, over and over once more. That’s because it gets crunchy and at the same time melts in the mouth. And of course, it’s easy to do.
And without a doubt, there is a charm in this format with a heart.
shortbread
If you love shortbread cookies, you will definitely love this recipe. I dare say it was one of the best pastas I’ve ever tried.
In addition to super delicious, it’s very easy to make and the best thing is to freeze!
Other ways to serve your biscuit
Around here, following cutting my cookies I made a charm by making hearts to stuff. Without a doubt, it turned out super cute, but it ends up being a little more work, since, for that, you need to use the creamiest guava paste.
However, it is possible to make this cookie as a casadinho, where you only bake the cookie and then stuff it with guava paste. And you can also cut and add a firm piece of guava paste in the middle of the dough and bake it that way.
In fact, whatever the format, the only certainty is that it will be delicious.
Tips for making the perfect cookie
Without a doubt, as I said, this is a very easy recipe to make. But some tips can help you make the perfect cookie, such as:
- use cold butter: this will make your biscuit even more crunchy;
- Work with cold dough: in the preparation mode you will see that I recommend leaving the dough in the fridge for a few minutes. If the weather is hot, gradually remove the dough to work with it still cold;
- Use a cooking mat: undoubtedly you can grease your mold or even use a non-stick paper, but the culinary mat is a great choice, not least because it distributes the heat more evenly;
- Wait for your cookie to cool: once your cookie comes out of the oven, it still isn’t quite done and not even crunchy. So let it cool for a few minutes.

How to store your shortbread cookies
As I said earlier, it is possible to freeze your dough still raw to make your cookies little by little. To do this, let the dough defrost in the fridge and then follow the preparation method as usual.
But if you want to store your baked cookies, my tip is to store them in an airtight container. Around here, I managed to keep the same texture for up to 4 days.

- culinary mat: Undoubtedly one of the essential accessories for anyone who loves to bake cookies. But that’s good for a lot of other preparations too;
- non-stick paper: Unfortunately, most of the tracing papers that we find on the market are not very good, my tip is to invest in non-stick papers;
- airtight pots: As this type of pot seals super well, there’s no danger of your cookie getting fluffy ahead of time;
- Crockery: In the photos that illustrate this recipe, we use Oxford Porcelain tableware.
