The design of a menu is rarely left to chance and the way the dishes are presented is often aimed at making you spend more money.
So says BBC World Service journalist and host of The Food Chain podcast, Ruth Alexander.
In a video shared on social networks, the latter explained certain techniques used by restaurateurs to extract more money from you. Some people called “menu engineers,” she says, think regarding many of the details that will get you to spend.

Framed
“If a dish is in a box, the sale of this item will increase by 30%,” explains the expert.
Arrangement of dishes
The order of dishes on a menu is not random. According to Ms. Alexander, most people order the first or last item they see.
“Many people first look at the top right of the menu, so that’s where restaurateurs will place their featured dishes which are more popular and more lucrative,” she says.
Long descriptions
According to the journalist, the longer the description of a dish, the more chef-like it is. Ruth Alexander states that one can add “18 cents for each letter longer than the average length.”
Rounded numbers
The choice of putting prices rounded to the dollar also serves to convince customers that this is a trendy or select restaurant. On the contrary, a menu where meal prices include pennies, not just dollars, will imply that you are saving money.
Flat in first position
“Putting an expensive dish at the top of a list makes you feel like those below it are more reasonably priced,” says Ruth Alexander.
