The “Whatz Hap” restaurant in Beringen is a successful business. Since June 1, it has offered an all-you-can-eat formula to choose from among 80 dishes. And this, for… five hours. The package is €37.50 per person. “The success is incredible. We are full until mid-November,” rejoices the manager who responds to our colleagues at “Belang van Limburg”. Despite this success, business, he says, might still be better.

Like many other restaurateurs, he is faced with the problem of “no shows”. This means that some customers do not show up on the day and time of the reservation.

But he decided to tackle, from November 3, another problem which is also a sort of “no show”. “About twice a week, we notice that groups arrive with fewer people than expected.” For example, a person reserves a table for 8 people and when the day comes, there are only 6 left. This represents a loss for the restaurateur who does not know how to turn around following having had to refuse reservations due to lack of space.

“The least you can do is call. This would allow me to rearrange the tables and satisfy people to whom I had to say no,” argues the Limburger.

His solution? Billing per table presents an additional amount of 20 euros per person absent! “If a group books for 6 people and there are only 4, it will be €40,” explains Jeroen Mangelschots, indicating that he has added this tip to the restaurant’s internal regulations. However, there is a way to escape it: “The all-you-can-eat formula extends from 5 p.m. to 10 p.m. If the person calls before 5 p.m. to change their reservation, they will not have to pay anything extra. And it allows other customers who are on a waiting list to come.”

On the Facebook page, the new regulations are well announced. Some react positively. Others wonder “what to do” if someone is sick right before going to a restaurant. As for the HoReCa Wallonia federation, its president, Luc Marchal, is skeptical. “I wonder if this is all legal. I can already imagine the faces of the people who are there. Will they pay for those absent? They are not responsible for it.”

Nevertheless, the Montois admits that he understands the reaction of the restaurateur. “The no show is a real problem. Doctors and dentists have reacted to this phenomenon. Almost all hotels require a bank imprint when booking. I recently went to a Michelin-starred restaurant in Antwerp. There too, there was a bank imprint requirement. That evening, a customer did not show up and he lost the €50 blocked for the reservation.”

Rather than charging on site, to customers who are present, he would rather lean towards this solution, the banking footprint. “Let’s say he has a reservation for a table of 8 people, he requests an advance of 8X20€ via the bank imprint and the matter is settled. In any case, this would raise people’s awareness…”
