Ingredients:
– 2 eggplants
– 2 zuchini
– 3 expert tomatoes
– 1 cup tomato sauce
– olive oil
– thyme
– oregano
– sal
– pepper
Preparation
Cut the eggplant and zucchini into slices with skin (not so thin) Pass them through olive oil and grill on a very hot griddle on both sides. Spice with salt and pepper. Cut the tomatoes into slices but leave them cool. In an ovenproof pan pour a generous cup of tomato sauce and on top of it the vegetables and herbs. Bake at 180°C for about 15 minutes. Finish with extra olive oil!
