Come fall, gratin meals are very comforting. Pizza and pasta are loved by everyone. This week, the essential of these dishes, mozzarella, is put to the test!

Our analysis
Twenty-four choices of mozzarella cheese were the subject of our analysis.
The 30 g portion was used to compare the products.
Each 30 g portion (approximately a 3 cm cube) provides:
Between 70 and 110 calories Between 4.5 and 9 g of lipids including between 2.5 and 6 g of saturated fat Between 0 and 2 g of carbohydrates Between 7 and 9 g of proteins Between 150 and 250 mg of sodium Between 15 and 20 % calcium
The best choices
Partly skimmed Mozza cheese from P’tit Québec is one of the best choices. A 30 g serving contains 80 calories, 5 g of fat including 3.5 g of saturated fat, 9 g of protein, 190 mg of sodium and 19% calcium. This mozzarella cheese is among the least rich in lipids and saturated fats, as well as among the richest in proteins and calcium on the test bench. In addition, it contains less sodium than the average of the products evaluated.

Part-skim mozzarella cheese from Unnamed is also one of the best options. A 30 g serving provides 90 calories, 6 g of fat including 3.5 g of saturated fat, 9 g of protein, 200 mg of sodium and 19% calcium. It is among the mozzarella cheeses lowest in saturated fat as well as highest in protein and calcium in the test. In addition, it contains less sodium than the average cheese analyzed.

Light Mozzarellissima cheese from Saputo completes the best choices. A 30 g serving provides 80 calories, 4.5 g of fat including 3 g of saturated fat, 9 g of protein, 220 mg of sodium and 17% calcium. Its nutritional value ranks it among the mozzarella cheeses lowest in saturated fat and highest in protein. In addition, it contains more calcium than the average of the products analyzed.

COMPROMISES
Galban’s light pizza mozzarella cheesei is one of the compromises. A 30 g serving provides 70 calories, 4.5 g of lipids including 2.5 g of saturated fat, 9 g of protein, 230 mg of sodium and 20% calcium. This is the mozzarella cheese lowest in saturated fat. In addition, it is among the richest in protein and calcium on the test bench. However, it contains more sodium than the average of the products analyzed. Galbani’s Pizza mozzarella cheese has similar nutritional value.

Compliments part-skim mozzarella cheese is also part of the compromises. A 30 g serving contains 90 calories, 5 g of fat including 3.5 g of saturated fat, 9 g of protein, 220 mg of sodium and 19% calcium. It is one of the cheeses lowest in saturated fat and richest in protein and calcium in the test. However, it contains slightly more sodium than average.

Pizza mozzarella cheese from Irrésistibles completes the compromises. A 30 g serving provides 90 calories, 6 g of fat including 4 g of saturated fat, 8 g of protein, 200 mg of sodium and 15% calcium. It contains less fat, saturated fat and sodium as well as more protein than the average product evaluated. On the other hand, it is one of the cheeses least rich in calcium in the test bench.

THE LEAST GOOD CHOICES
Compliments mozzarella cheese is one of the worst choices. A 30 g serving contains 110 calories, 9 g of fat including 5 g of saturated fat, 7 g of protein, 220 mg of sodium and 15% calcium. This cheese is therefore among the products richest in fat as well as among the least rich in protein and calcium on the test bench. Its sodium content is also above average.

Mozza cheese from P’tit Québec, mozzarella cheese from Sélection and Pizza mozzarella cheese from Cracker Barrel are also less good options. A 30 g portion of these three cheeses provides between 100 and 110 calories, 8 g of lipids including 5 g of saturated fat, 7 g of protein, 240 mg of sodium and 15% calcium. These cheeses are therefore also among the options richest in saturated fat and sodium as well as among the least rich in protein and calcium on the test bench.

Finally, Black Diamond mozzarella completes the less good choices. A 30 g serving provides 110 calories, 9 g of fat including 6 g of saturated fat, 7 g of protein, 220 mg of sodium and 15% calcium. This mozzarella cheese is among the richest in saturated fat on the test bench. In addition, it contains more sodium, less protein and less calcium than the average product evaluated.

The list of ingredients
All mozzarella cheeses analyzed have a relatively short and simple list of ingredients. The majority of them contain modified milk substances (79%). Health Canada defines modified milk substances as “any liquid, concentrated, dried, frozen or reconstituted form of the following products: skimmed milk with reduced calcium content (obtained by ion exchange process), casein, caseinates, milk products cultured milk, whey proteins, ultrafiltered milk, whey (whey), whey butter (whey), whey cream (whey) and any other constituent of milk whose chemical state has been altered in such a way to differ from that in which it is found in milk. In cheeses, modified milk ingredients can be used to better control moisture or increase protein content. Finally, all pizza mozzarella cheeses analyzed contain calcium chloride, a texturing agent commonly used in cheese making.
