The Salzburg seminar farmer Sophie Leitner from Strobl shares her recipe for delicious pumpkin noodles and wishes you a lot of fun cooking them.

Ingredients

For the noodles:
400 g spelled flour type 700
2 eggs, 1 teaspoon salt, 1 tablespoon oil

For the sauce:
A small pumpkin (approx. 500 g)
200 g whipped cream,
150 ml white wine,
100 g Parmesan, 1 onion,
Salt, pepper, soup seasoning

Topping: Walnuts, gorgonzola

preparation

For the noodles, mix all the ingredients into a smooth and rather firm dough. Then brush it with oil and let it rest.

In the meantime, cut the onion, peel and seed the pumpkin and cut it into approx. 1 cm cubes.

Now fry the onions and pumpkin in butter and deglaze with the white wine. Then add the whipped cream, salt, pepper and 1 teaspoon of soup seasoning (homemade, if you use a ready-made one, half a teaspoon is enough) and let it simmer briefly.

Now add the grated Parmesan to the sauce. If desired, the sauce can be pureed now.

Let’s continue with the noodles. Roll out the dough very thinly and cut into strips approx. 5 mm wide. Cook the noodles for regarding 4 minutes until al dente, this can vary depending on the thickness of the noodles.

Now the pasta can be served with the seasoned sauce. I like to add walnuts and Gorgonzola as a topping. If you like, you can also add the Gorgonzola to the sauce. Not everyone here likes him, that’s why I solved it this way.

The sauce also goes great with gnocchi.
