Processed foods most strongly linked to diabetes

Consumption of ultra-processed industrial foods is linked to an increased risk of type 2 diabetes, according to a study published in February 2023 in the journal Diabetes Care.

Some of these foods seem to contribute more to the increased risk.

Jean-Philippe Drouin-Chartier of Laval University (Quebec) and his colleagues analyzed data from three large American surveys in which some 198,600 participants responded, every 2 to 4 years for 30 years, to questionnaires on their diet.

The foods consumed were subdivided into four categories according to their degree of processing, ranging from minimally or unprocessed to ultra-processed.

« Ultra-processed foods are defined as industrial formulations made largely or entirely with substances extracted from foods, often chemically modified, and in which there are additives to accentuate flavors or extend shelf life. A direct association between the consumption of ultra-processed foods and the risk of diabetes has been observed:

  • every 1% increase in the consumption of ultra-processed foods translates to a slightly more than 1% increase in the risk of type 2 diabetes;
  • the risk of people in the top quintile of consumption is 56% higher than that of people in the bottom quintile.

Combining these data with those from four European studies that looked at the same question, making up a cohort of more than 415,500 participants, led to similar conclusions. “The sample size and the strength of the relationship we observed between the two variables suggest causation“says the researcher.

Some ultra-processed foods seemed to contribute more to the increased risk of diabetes:
