How do I make my dough firmer?

First of all, it’s important to warn you that this croquette is very creamy, because in the version I’m going to teach you here, I didn’t add any type of flour, but if you want to make your dough firmer, to make it easier when preparing it, I’ll let you know Some tips:

  • bake your potato: Undoubtedly, this choice will make ALL the difference. Even for those who want to make the creamier version, like me!
  • Choose a hard cheese: I used a good Parmesan, which is a firmer cheese and doesn’t melt as much. Using a softer cheese, such as mozzarella or dish, may interfere with the final result;
  • Add flour for more structure: Certainly adding 1 to 2 tablespoons of flour to your dough will make all the difference when preparing it. For this, you can choose not only wheat flour, but also breadcrumbs and even cornstarch or rice flour, for a gluten-free version.

Can I bake my croquette?

I tested preparing this recipe in 3 ways: baking in the oven, in the fryer without oil and frying. Undoubtedly, the last option was the one that achieved the best result.

That’s because, as I said, my dough was creamier and in the deep frying, it’s easier to keep the croquette’s shape. In the other 2 ways it was tasty, but the saltiness lost its shape a little.

If you don’t want to fry your croquette, I definitely recommend adding flour to your dough. That way there will be more structure.

Also, remember to get your oven or deep fryer very hot before adding your kibble.

Can I freeze potato croquettes?

Yes! You can freeze your potato croquettes. My recommendation is to do this right following you finish breading.

Then arrange your dumplings on a board or board and take them to the freezer for a few hours. When firm, transfer to jars or storage bags.
