Pineapple in syrup scented with ginger, lime and sake for sensitive palates

Ingredients:
– 1 medium pineapple
– 800 gr organic sugar
– 800 ml filtered water
– skin of a lime
– 50 gr ginger
– 50 cc sake

Procedure

Peel and cut the pineapple into 1 cm slices and set aside. On the other hand, in a pot place the organic sugar, water, lime peel, ginger and bring to a gentle boil for approximately 15 to 20 minutes until a slightly viscous consistency is achieved.

Add the pineapple and cover with greaseproof paper and cook until the pineapple is slightly transparent and very tender. Remove from the heat and let the pineapple cool in the syrup, add the sake and store cold.

This recipe is very versatile and can be used with other fruits such as mango, pear, peaches or plums.
