Ingredients

  • 800 g of cod fillets;
  • 400 g of potatoes (here we use the Calabrian version);
  • 1 small yellow pepper;
  • 1 small red pepper;
  • 1 medium red onion;
  • 3 cloves of garlic;
  • 200 g of cherry tomatoes;
  • 1/2 cup of olive oil;
  • olives to taste;
  • Salt and black pepper to taste.

Instructions

  1. Start by cooking your cod fillets. If you use the salted version, you will need to change the water 2 to 3 times to remove excess salt. If you use the frozen and salt-free option, you will not need to change the water and 15 minutes should be enough – for more tips, click here;
  2. Right following this step, cut your fish into large pieces. In the same way, cut the onion and peppers into large cubes;
  3. In a dish that fits all the ingredients in a single layer, add 1/4 of the amount of olive oil to the bottom;
  4. Then, mix the cod, onion, peppers, potatoes, chopped garlic and tomatoes in this dish and finish with the rest of the olive oil, salt and pepper to taste;
  5. Cover your dish with aluminum foil and bake at an average temperature of 180° for 40 minutes or until the vegetables are very soft;
  6. Before serving, add the olives!
