The recipe for peach crumble with lemon and hazelnut shortbread.
For 4 people
Ingredients
- 8 peaches, pitted and quartered
- 2 tbsp. at s. sugar
- Juice of 1/2 lemon
For the sand:
- 100g of flour
- 100g cold butter
- 100g brown sugar
- 6 lemon shortbread cookies, broken into small pieces
- 25 g powdered hazelnuts
Preparation
Preheat the oven to 180° (th. 6).
Place the peach wedges in a baking dish. Sprinkle them with lemon juice and
sprinkle them with sugar. Bake for 10 mins.
Meanwhile, prepare the sand: mix the flour, butter and brown sugar from the end of the
fingers. Add cookies and hazelnuts.
Spread this batter over the preparation and bake for 10 minutes. until the crust is
nicely golden.
With apricots, the shortbread can be replaced by a mixture of macaroons and
Rocks In The Coconut.
With nectarines, a madeleine and crushed walnut pairing is great.
