pancake cake with oatmeal and dulce de leche

Ingredients:
For the mass
– 5 cups of oat flour (750 g)
– 5 eggs
– 4 cups of skimmed milk (800 ml)
– 4 tablespoons of olive or coconut oil
– 1 cup sweetener
– 2 tablespoons vanilla
– 2 teaspoons of baking powder

For the filling
– 600 g of unsweetened dulce de leche

It is delicious. Don’t stop doing it.

Procedure

We start by preparing the pancake mix. For this we combine all the ingredients of the dough in a container and mix them very well with a mixer until we achieve a slightly liquid and homogeneous mixture.

Heat a frying pan and when it is warm, add part of the previous mixture with a ladle. Move to give it a circular shape.

Cover the pan with its respective lid and once the pancake forms small holes, turn it over with the help of a spatula. Wait a couple of minutes for the other side to cook and remove.

Repeat the previous step until you finish the mixture (up to 11 pancakes come out with that proportion).

Now we take a plate and put it on each pancake. Then we cut the excess edges giving the same shape and size to all the pancakes. Reserve the excess edges.

For the assembly we will begin by putting a pancake, then dulce de leche and another pancake on top. So on until you finish them all. To the leftover edges and we take them to the processor and grind them until they are like crumbs.

With these crumbs we cover the entire top and edges of the cake. Take to the fridge for approximately 30 minutes and done.

USE: the mixture will be somewhat thick so the pancakes come out a little thick.
