Who doesn’t love a good garlic bread? Without a doubt, this is one of my favorite barbecue dishes. Especially when it’s done well.
But who said we can only eat garlic bread at the barbecue? This delicacy serves as a delicious starter or appetizer for a get-together with friends.
For this recipe, in addition to including the cheese, which will make all the difference, we will also roast the garlic, which will bring an even more special flavor to your preparation.
Baked garlic
As I said, undoubtedly one of the great secrets of this recipe is that you will roast the garlic before preparing the mixture that will fill your bread.
For this, you will mix the garlic cloves with enough olive oil to cover them and you will roast them until they are soft.
Here are some tips to help you prepare:
- Choose a small pot, big enough for the amount of garlic cloves you want to roast, that way you won’t need too much oil;
- You can add a little salt before roasting your garlic, that way they will be even tastier;
- Cover your pot with aluminum foil for faster preparation;
- You can take it to the oven or the fryer without oil. I used the last option and within 10 minutes my garlic was super soft;
- Do not discard the oil where you will cook your garlic. It is delicious and can be used in stir-fries.
which bread to choose
The truth is that you can make this recipe using any bread. From French to even brioche. However, my suggestion is to give preference to breads with a thinner crust, since you will need to gratin and that way, your bread will be more toasted.
Also, if you are going to choose softer breads (which usually have butter or milk in the dough, as is the case with brioche), remember that this type of bread ends up toasting faster and, therefore, it may be better to use less stuffing.
Another important tip is that this cut, as we did, is more suitable for bread with a thin crust and a more basic dough, as they will be able to stay longer in the oven. That way, to serve the same way we do, opt for French bread, baguette or even Italian breads.
For other breads, my suggestion is to cut it into slices and add the cream on top.

Ingredients

50 g of salted butter;

1/2 cup mozzarella cheese;

5 large garlic cloves – see notes;

oil;

1 tablespoon of fresh parsley;

salt to taste.
Instructions
- To start, distribute your garlic cloves in a pot big enough to spread them and cover with olive oil. Cover your pot with aluminum paper and take it to bake at a maximum temperature of 200° until it’s very soft;
- Then mix your garlic (crushed) with the other ingredients until you form a more uniform mass;
- Take your paste to the fridge to make it a little firmer, but still creamy;
- Then, add the stuffing to the bread and bake it at a high temperature until it turns golden and the cheese has melted;
- Serve hot.
Notes
You can add more garlic depending on the size of your cloves, as well as if you prefer a more flavorful version. Without a doubt, it is possible to double this amount without errors.
