Dr. Ahmed Jalal, Dean of the Faculty of Agriculture, Ain Shams University, revealed to us that boiling eggs for a long time and cooling them quickly may lead to the binding of the iron and sulfur elements present in the eggs with the protein and the formation of a complex complex of gray green color, which is not harmful, but appears on Eggs in a disgusting way, and also note that exposure of eggs at a temperature higher than 60-70% degrees Celsius for a long period of time causes the vital components of the yolk to deteriorate, such as the immune globulins present in the yolk, and this affects the biological value of these components in the eggs.
The correct way to boil eggs
Here is the correct and non-harmful way to human health when boiling eggs, which is as follows:
- Put the eggs in a bowl and add cold water to it.
- Then raise the pot over the fire until it boils, then cover the pot and turn off the heat.
- Then we leave the eggs in hot water for 20 minutes.
- After the 20-minute period is up, the eggs are cooled in cold water.
- Thus, we get healthy boiled eggs in a correct and healthy way that does not harm human health.
How to handle eggs in the kitchen
The Professor of Poultry Breeding, Mr. Dr. Ahmed Galal, Dean of the Faculty of Agriculture, Ain Shams University, explained to us how to deal with eggs in the kitchen, which are as follows:
- In the case of buying eggs in cartons, the eggs are kept in the same cartons.
- To maintain the quality of eggs, eggs are placed on one of the shelves of the refrigerator.
- Not keeping eggs in the refrigerator door in the places designated for it, as studies have shown that opening and closing the refrigerator door several times a day leads to cooling of the refrigerator layer, which exposes eggs to damage.
- Eggs should not be kept next to foods with strong odors such as fish and onions.
- Not washing eggs, as washing eggs contaminates the internal contents of the eggs, through the holes in them.
