Minestrone – Panel therapy

What’s up guys, how’s it going? Today I came to cause on top of the controversy and prove that soup is dinner yes, so let’s talk regarding an amazing dish that you need to know regarding. and do: the Minestrone!

Ingredients:

  • 2 tablespoons of olive oil

  • 2 cups cauliflower cut into florets

  • 1 cup peeled and diced tomatoes
  • 4 cups of chicken broth
  • 1 cup cooked white beans
  • 1 cup cooked white rice
  • Salt and pepper to taste
  • Fresh basil leaves to taste

Preparation mode:

  1. Heat the oil in a large pan and add the onion, garlic and celery. Sauté until soft.
  2. Add the cauliflower, zucchini, tomato and sauté for a few more minutes.
  3. Add the chicken broth, cooked white beans and white rice. Season with salt and pepper to taste.
  4. Let it cook on low heat for regarding 20 minutes or until the vegetables are soft.
  5. Serve hot, sprinkled with fresh basil leaves.
