Ingredients:

For Dim Sum

  • 195 grams of rice flour
  • 50 grams of tapioca flour
  • 50 grams of flour
  • 20 grams of salt
  • 40 grams of oil
  • 360 grams of cold celery stock
  • 10 grams of hot celery stock

Shiitake stuffing

  • 150 grams of shiitake mushrooms
  • 15 grams of shallots
  • 5 grams of chopped chives
  • 1 gram of fish sauce
  • 21 grams of soy sauce
  • 8 grams of ginger

For miso and orange soup

  • 1 liter dashi soup stock
  • 100 grams of miso paste
  • 2 orange peel

Method of preparation:

  • Prepare the dim sum: in a bowl, mix together all the dry ingredients, add the oil and the cold celery stock and mix all the ingredients well.
  • Add the hot celery stock and mix again until the mixture is smooth. Pour an even layer on a tray with a silicone surface (about 150 grams per tray). Mars in a preheated oven at 100 degrees for the Turbo program for 4 minutes. Cool and cut out circles with a ring and place on a tray to the side to rest.
  • Prepare the shiitake stuffing: mix all the ingredients together and season to taste.
  • Fill the dim sum with the mushroom mixture. Make a small package spring and tie with chives.
  • Prepare miso and orange soup: bring the dashi soup stock to a boil and add the miso. When the soup starts to taste like miso, transfer it to another pan and add the orange peel. Leave in the pan to continue cooking and remove the orange peel before serving.
  • Serve: put 2 dim sum on each plate, drizzle with the orange miso sauce and serve.

    The iconic buttery mashed potatoes that everyone tries to imitate

    Ingredients:

    for mashed potatoes

    • 1 kg of potato of the Rata variety (with the skin)
    • 50 grams of quality butter
    • 150 grams of sweet cream
    • A pinch of salt

    Method of preparation:

  • Cook the potatoes in water with the skin on until they are soft.
  • Filter and peel when they are boiling (important to keep the texture velvety and airy). While still hot, pass through a fine sieve three times.
  • Boil the cream, and mix with the puree gradually. Add little by little, add the butter and mix gently until you get an airy puree. Season with fine salt and serve immediately.

    Vegan chocolate mousse from 3 ingredients

    Ingredients:

    • 475 grams of dark chocolate 57% cocoa solids
    • 225 grams of hot water
    • 500 grams of cognac/brandy

    Method of preparation:

  • Heat the chocolate in a bain-marie to 50 degrees (measure with a cooking thermometer)
  • Transfer the chocolate to the mixer, and whip at a slow-medium speed with the whisk, after a few seconds gradually pour in the hot water and continue whipping. At this point the chocolate becomes lighter and its texture swells.
  • Gradually pour in the cognac or brandy and continue to whip for 30 seconds.
  • Transfer to a deck and cool the deck in ice water for half an hour.
  • Serve: Pour through the siphon into an elegant glass and serve.
