Pork is the most popular meat in Austria. It is cheap and pleasant, eaten as a schnitzel, roast, meat loaf, bacon or sausages. Annual per capita consumption is around 34 kilograms. Nevertheless, many pig farmers give up, 25 years ago there were five times as many: Pork “in action” often costs only 6 euros per kilo.
Away from the conventional market, individual businesses try to deliver their animals to top restaurants; they keep breeds like Woolly Pigs, Duroc or Turopolje – and they don’t get rich either. Research into a competitive market and the struggle to establish “good” pork.
