Spanish experts tested nine people over the age of 65 with stage 1 diabetes.

According to the British Daily Mail, volunteers were given three meals a day in which potatoes, rice or legumes were replaced with quinoa.

This may be “critical” for preventing type 2 diabetes, the researchers said.

Experts are of the opinion that the micronutrient content in quinoa, compared to bread, rice or potatoes, helps slow digestion, causing a slower rise in glucose.

It is worth noting that quinoa belongs to the amaranth family, such as spinach and beetroot, and its leaves can also be eaten green as vegetables, but this is not common, as it is eaten as a grain following cooking.
